My latest food obsession is Chia Seed Pudding. Not only is it super easy to make, but it also tastes yummy and each little seed is loaded with health benefits. Chia seeds are non-GMO and naturally free of gluten. They are full of antioxidants, low-carb friendly, high in protein, calcium, and omega-3 fatty acids (2 tsps = 4 oz of salmon), improve metabolic health, and a fiber filled food. So, you can see why chia seeds have earned their term as a "superfood." There are endless flavor combos for Chia seed pudding, but my favorite for the holidays is this Snickerdoodle recipe. Make it for yourself as a guilt-free (yet wonderfully decadent) treat and pack it in cute mason jars with recipe labels as a thoughtful gift.
Ingredients: Serves 2 Time: 5 minutes (plus overnight to set) 1 cup of unsweetened vanilla almond milk 1/3 cup of soft dates (or soak in water to soften for 2 hours) 1/4 teaspoon of vanilla extract 1/8 teaspoon of sea salt 1/4 teaspoon of cinnamon 1/3 cup of chia seeds Combine all of the ingredients (except for the chia seeds) in a blender. Pour blended goodness into an airtight container and mix in the chia seeds. Place in the refrigerator to set overnight. Top with bananas, chopped raw walnuts or pecans, and a dash of cinnamon or a festive cinnamon stick. (If you are gifting, leave out the bananas)
