Guilt-Free Banana Pancakes

The New Year represents a clean slate; a fresh start. This does not necessarily mean creating a new you, but instead allowing the best version of you to shine. That is where New Years Resolutions come in. We create these resolutions as a promise to commit to something that will benefit us towards a brighter future.
 
My discipline for the month of January is to give up added sugar, dairy, legumes, grains, and alcohol as part of a program called Whole 30. For as far back as I can remember, I always had problems with my stomach. I have seen doctors and specialists for endless amounts of testing but they all came back negative. So this year I decided to take it upon myself to cleanse my system for a month, then I can slowly reintroduce these foods into my diet to identify what are the trigger foods.
 
As a food lover with a very sweet tooth, this food cleanse will not be a walk in the park. Just four days in and my mind is whispering sugar every five seconds. My saving grace was this recipe, which has curbed my sugar cravings and kept me sane. These banana pancakes pack just the right amount of sweetness just from the bananas themselves. Not to mention, this gluten free recipe requires no added sugar from honey, agave, or coconut sugar. Although I used a dairy product called ghee to make my pancakes, according to Whole 30 it is an approved paleo-friendly oil. Try this recipe whether you are on a food cleanse or a diet for breakfast, a sweet snack, or dessert. I promise you will love it!
 

Guilt-Free Banana Pancake Recipe
Serves 2
 
INGREDIENTS:
Pancake
  • 1 banana
  • 2 eggs 
Topping
  • Coconut cream
  • Blackberries
  • Raspberries
  • Blueberries
  • Unsweetened Coconut Flakes
  • Ground Cinnamon
 
PREPARATION:           
  1. Mix the banana and eggs in a food processor or blender until smooth
  2. Melt unsalted butter or ghee in a large skillet over medium heat
  3. Pour a pancake sized amount of batter into skillet
  4. Wait for bubbles to form around the edges of batter (approx. 30 seconds) and flip
  5. Spread coconut cream on pancake and add all the other yummy toppings
  6. Enjoy anytime those sugar cravings kick in
